Ingredients

  • Raw peanuts - 200 grams
  • Sesame oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Szechuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onion - 1, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Spread the raw peanuts evenly on a baking sheet and roast for 10-12 minutes, or until lightly golden and fragrant. Stir halfway through for even roasting.
  3. In a small pan, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Add the Szechuan peppercorns and red chili flakes to the pan, stirring for another 30 seconds to release their flavors.
  5. Remove the pan from heat and stir in the soy sauce, rice vinegar, and sugar until the mixture is well combined.
  6. Once the peanuts are roasted, remove them from the oven and let them cool for a few minutes.
  7. Pour the spicy sauce over the roasted peanuts and mix well to coat all the peanuts evenly.
  8. Transfer the spicy peanuts to a serving bowl and garnish with chopped green onion.
  9. Serve warm or at room temperature as a delightful appetizer.
