- Szechuan peppercorns - 1 teaspoon
- Red chili flakes - 1 teaspoon
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Green onion - 1, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Spread the raw peanuts evenly on a baking sheet and roast for 10-12 minutes, or until lightly golden and fragrant. Stir halfway through for even roasting.
- In a small pan, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the Szechuan peppercorns and red chili flakes to the pan, stirring for another 30 seconds to release their flavors.
- Remove the pan from heat and stir in the soy sauce, rice vinegar, and sugar until the mixture is well combined.
- Once the peanuts are roasted, remove them from the oven and let them cool for a few minutes.
- Pour the spicy sauce over the roasted peanuts and mix well to coat all the peanuts evenly.
- Transfer the spicy peanuts to a serving bowl and garnish with chopped green onion.
