- Shirataki noodles - 200 grams
- Ground pork - 150 grams
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Szechuan peppercorns - 1 teaspoon
- Chili oil - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Green onion - 2 stalks, chopped
- Sesame oil - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the Shirataki noodles under cold water and drain. Set aside.
- In a large skillet or wok, heat the chili oil over medium heat.
- Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
- Add the ground pork to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the Szechuan peppercorns, soy sauce, rice vinegar, and season with salt and pepper to taste. Cook for another 2-3 minutes to combine the flavors.
- Add the Shirataki noodles to the skillet, tossing well to coat them in the sauce and heat through, about 2-3 minutes.
- Remove from heat and drizzle with sesame oil. Stir in the chopped green onions and cilantro.
