Ingredients

  • Cornstarch - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Szechuan peppercorns - 1 teaspoon
  • Dried red chilies - 5-6 pieces
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2 stalks, chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Chili oil - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Chicken broth - 100 ml
  • Sugar - 1 teaspoon

Steps

  1. Rinse the fish fillets under cold water and pat dry with paper towels. Cut them into bite-sized pieces and season with salt.
  2. In a bowl, coat the fish pieces with cornstarch until evenly covered. Set aside.
  3. Heat vegetable oil in a large pan or wok over medium heat. Add the Szechuan peppercorns and dried red chilies, stirring until fragrant, about 1 minute.
  4. Add minced garlic and ginger to the pan, stirring constantly for another minute until aromatic.
  5. Carefully add the coated fish pieces to the pan, cooking for about 3-4 minutes on each side until golden and cooked through. Remove the fish from the pan and set aside.
  6. In the same pan, add chicken broth, soy sauce, sugar, and chili oil. Bring to a simmer and let it cook for 2-3 minutes.
  7. Return the cooked fish to the pan, gently tossing to coat in the spicy sauce. Cook for an additional 2 minutes to heat through.
  8. Garnish with chopped green onions before serving.
