- Cornstarch - 3 tablespoons

- Szechuan peppercorns - 1 teaspoon
- Dried red chilies - 5-6 pieces
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2 stalks, chopped
- Soy sauce (gluten-free) - 2 tablespoons
- Chili oil - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Chicken broth - 100 ml
- Sugar - 1 teaspoon
Steps
- Rinse the fish fillets under cold water and pat dry with paper towels. Cut them into bite-sized pieces and season with salt.
- In a bowl, coat the fish pieces with cornstarch until evenly covered. Set aside.
- Heat vegetable oil in a large pan or wok over medium heat. Add the Szechuan peppercorns and dried red chilies, stirring until fragrant, about 1 minute.
- Add minced garlic and ginger to the pan, stirring constantly for another minute until aromatic.
- Carefully add the coated fish pieces to the pan, cooking for about 3-4 minutes on each side until golden and cooked through. Remove the fish from the pan and set aside.
- In the same pan, add chicken broth, soy sauce, sugar, and chili oil. Bring to a simmer and let it cook for 2-3 minutes.
- Return the cooked fish to the pan, gently tossing to coat in the spicy sauce. Cook for an additional 2 minutes to heat through.
- Garnish with chopped green onions before serving.
