  • Fresh crab - 500 grams

  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste

Steps

  1. Clean the fresh crab, removing the shell and gills, then cut the crab into pieces.
  2. In a small bowl, mix the soy sauce, rice vinegar, chili oil, brown sugar, and cornstarch to create a marinade.
  3. In a large pan or wok, heat the vegetable oil over medium heat. Add the Szechuan peppercorns and dried red chilies, frying them for about 1 minute until fragrant.
  4. Add the minced garlic and ginger to the pan, stirring for another 30 seconds until aromatic.
  5. Add the crab pieces to the pan, tossing them to coat in the oil and spices. Cook for 5-7 minutes until the crab is heated through.
  6. Pour the marinade over the crab, stirring well to combine. Cook for an additional 3-5 minutes until the sauce thickens.
  7. Add chopped green onions, and stir to combine. Season with salt to taste.
  8. Serve hot, garnished with extra green onions if desired.
