  • Szechuan peppercorns - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce (kosher) - 1 tablespoon
  • Chili paste - 1 tablespoon
  • Scallions (chopped) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Burger buns (kosher) - 2
  • Cucumber (thinly sliced) - 1/2
  • Pickled carrots - 50 grams
  • Lettuce leaves - 2
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon

Steps

  1. In a small pan, toast the Szechuan peppercorns over medium heat for 1-2 minutes until fragrant, then grind them into a powder.
  2. In a mixing bowl, combine the ground beef, ground Szechuan peppercorns, minced garlic, grated ginger, soy sauce, chili paste, and chopped scallions. Mix until just combined.
  3. Form the mixture into two equal patties, about 1.5 cm thick.
  4. Heat a skillet over medium-high heat and add sesame oil. Once hot, cook the patties for 4-5 minutes on each side or until they reach your desired doneness.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly on a separate pan or in a toaster.
  6. Spread mayonnaise on the bottom half of each toasted bun, then add a lettuce leaf, followed by the cooked patty.
  7. Top each burger with sliced cucumber, pickled carrots, and a drizzle of Sriracha sauce.
  8. Cover with the top half of the bun and serve immediately.
