  • Szechuan peppercorns - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Soy sauce (gluten-free) - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Bell pepper, sliced - 1/2 cup
  • Green onion, chopped - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons

Steps

  1. In a small bowl, combine the shrimp with cornstarch, salt, and black pepper. Toss well to coat the shrimp evenly and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the Szechuan peppercorns and stir-fry for about 30 seconds until fragrant.
  3. Add the minced garlic and ginger to the skillet, cooking for another 30 seconds until aromatic.
  4. Increase the heat to high and add the shrimp to the skillet. Stir-fry for 3-4 minutes until the shrimp are pink and opaque.
  5. Add the sliced bell pepper, soy sauce, and chili oil to the skillet. Stir well and cook for an additional 2 minutes until the bell peppers are slightly tender.
  6. Remove from heat and garnish with chopped green onions before serving.
