- Ginger, minced - 1 teaspoon
- Soy sauce (gluten-free) - 2 tablespoons
- Chili oil - 1 tablespoon
- Bell pepper, sliced - 1/2 cup
- Green onion, chopped - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
Steps
- In a small bowl, combine the shrimp with cornstarch, salt, and black pepper. Toss well to coat the shrimp evenly and set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the Szechuan peppercorns and stir-fry for about 30 seconds until fragrant.
- Add the minced garlic and ginger to the skillet, cooking for another 30 seconds until aromatic.
- Increase the heat to high and add the shrimp to the skillet. Stir-fry for 3-4 minutes until the shrimp are pink and opaque.
- Add the sliced bell pepper, soy sauce, and chili oil to the skillet. Stir well and cook for an additional 2 minutes until the bell peppers are slightly tender.
- Remove from heat and garnish with chopped green onions before serving.
