Ingredients

  • Shiitake mushrooms - 200 grams
  • Oyster mushrooms - 200 grams
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Scallions - 2, chopped
  • Red chili flakes - 1/2 teaspoon
  • Brown sugar - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Soak the shiitake and oyster mushrooms in warm water for 15 minutes to rehydrate if using dried mushrooms, then drain and pat dry.
  2. In a small pan, dry roast the Szechuan peppercorns over medium heat for 1-2 minutes until fragrant, then grind them into a coarse powder using a mortar and pestle or spice grinder.
  3. In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, grated ginger, ground Szechuan peppercorns, red chili flakes, brown sugar, and lime juice. Mix well to create a marinade.
  4. Add the cleaned mushrooms to the marinade, tossing to coat evenly. Let them marinate for at least 10 minutes.
  5. Heat the vegetable oil in a grill pan or on a BBQ grill over medium-high heat.
  6. Remove the mushrooms from the marinade, shaking off excess liquid, and place them on the grill pan.
  7. Grill the mushrooms for about 4-5 minutes on each side until they are tender and have nice grill marks. During the last minute of grilling, sprinkle chopped scallions over the mushrooms.
  8. Once grilled, transfer the mushrooms to a serving plate and garnish with fresh cilantro before serving.
