- Mushrooms - 100 grams, sliced
- Spinach - 50 grams, fresh

Steps
- Preheat your oven to 220°C (428°F).
- In a dry skillet over medium heat, toast the Szechuan peppercorns for 1-2 minutes until fragrant, then crush them slightly using a mortar and pestle or the back of a spoon.
- In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add sliced red bell pepper, zucchini, and mushrooms to the skillet. Cook for about 5-7 minutes until the vegetables are tender. Stir in fresh spinach and cook until wilted.
- Add the crushed Szechuan peppercorns, soy sauce, and chili oil to the vegetables. Mix well and remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the sautéed vegetable mixture evenly over the pizza dough.
- Sprinkle shredded mozzarella cheese on top of the vegetables.
- Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven, top with chopped fresh cilantro, slice, and serve hot.
