Ingredients

  • Pizza dough - 250 grams
  • Szechuan peppercorns - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams, fresh
  • Mozzarella cheese - 150 grams, shredded
  • Soy sauce - 1 tablespoon
  • Chili oil - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a dry skillet over medium heat, toast the Szechuan peppercorns for 1-2 minutes until fragrant, then crush them slightly using a mortar and pestle or the back of a spoon.
  3. In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add sliced red bell pepper, zucchini, and mushrooms to the skillet. Cook for about 5-7 minutes until the vegetables are tender. Stir in fresh spinach and cook until wilted.
  5. Add the crushed Szechuan peppercorns, soy sauce, and chili oil to the vegetables. Mix well and remove from heat.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  7. Spread the sautéed vegetable mixture evenly over the pizza dough.
  8. Sprinkle shredded mozzarella cheese on top of the vegetables.
  9. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven, top with chopped fresh cilantro, slice, and serve hot.
