- Sesame oil - 1 tablespoon

- Vegetable broth - 500 ml
- Soy sauce (halal) - 2 tablespoons
- Chili paste - 1 tablespoon
- Rice noodles - 150 grams
- Tofu, cubed - 100 grams
- Spring onions, chopped - 2 stalks
- Bok choy, chopped - 100 grams
- Coriander leaves, for garnish - a handful
- Lime wedges, for serving - 2
Steps
- In a dry pan over medium heat, toast the Szechuan peppercorns for 2-3 minutes until fragrant, then grind them into a powder.
- In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger for about 1 minute until fragrant.
- Add the vegetable broth, soy sauce, chili paste, and ground Szechuan peppercorns to the pot, stirring to combine.
- Bring the broth to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
- Meanwhile, cook the rice noodles according to the package instructions, then drain and set aside.
- In the last 5 minutes of the broth simmering, add the cubed tofu and chopped bok choy to the pot, cooking until the bok choy is tender.
- To serve, place a portion of the cooked rice noodles in each bowl and ladle the hot broth with tofu and bok choy over the noodles.
- Garnish with chopped spring onions and coriander leaves, and serve with lime wedges on the side.
