Ingredients

  • Szechuan peppercorns - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 3 cloves
  • Ginger, minced - 1 teaspoon
  • Vegetable broth - 500 ml
  • Soy sauce (halal) - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Rice noodles - 150 grams
  • Tofu, cubed - 100 grams
  • Spring onions, chopped - 2 stalks
  • Bok choy, chopped - 100 grams
  • Coriander leaves, for garnish - a handful
  • Lime wedges, for serving - 2

Steps

  1. In a dry pan over medium heat, toast the Szechuan peppercorns for 2-3 minutes until fragrant, then grind them into a powder.
  2. In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger for about 1 minute until fragrant.
  3. Add the vegetable broth, soy sauce, chili paste, and ground Szechuan peppercorns to the pot, stirring to combine.
  4. Bring the broth to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  5. Meanwhile, cook the rice noodles according to the package instructions, then drain and set aside.
  6. In the last 5 minutes of the broth simmering, add the cubed tofu and chopped bok choy to the pot, cooking until the bok choy is tender.
  7. To serve, place a portion of the cooked rice noodles in each bowl and ladle the hot broth with tofu and bok choy over the noodles.
  8. Garnish with chopped spring onions and coriander leaves, and serve with lime wedges on the side.
