Ingredients

  • Whole wheat noodles - 150 grams
  • Red bell pepper - 1 medium, thinly sliced
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, grated
  • Green onions - 3, chopped
  • Cilantro - 30 grams, chopped
  • Peanuts - 30 grams, crushed
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Szechuan peppercorns - 1 teaspoon, toasted and crushed
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. Cook the whole wheat noodles according to the package instructions, then drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the sliced red bell pepper, julienned cucumber, grated carrot, chopped green onions, and chopped cilantro.
  3. In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, toasted and crushed Szechuan peppercorns, minced garlic, and grated ginger to create the dressing.
  4. Add the cooked noodles to the mixing bowl with the vegetables and pour the dressing over the top.
  5. Toss everything together gently until the noodles and vegetables are well coated with the dressing.
  6. Top the salad with crushed peanuts for added crunch before serving.
