- Cilantro - 30 grams, chopped
- Peanuts - 30 grams, crushed
- Sesame oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Szechuan peppercorns - 1 teaspoon, toasted and crushed
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
Steps
- Cook the whole wheat noodles according to the package instructions, then drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the sliced red bell pepper, julienned cucumber, grated carrot, chopped green onions, and chopped cilantro.
