Steps

  1. In a dry skillet, lightly toast the Szechuan peppercorns over medium heat for 2-3 minutes until fragrant, then grind them into a fine powder.
  2. In a bowl, mix the ground Szechuan peppercorns, minced garlic, grated ginger, soy sauce, rice vinegar, chili oil, brown sugar, sesame oil, salt, and black pepper to create a marinade.
  3. Place the lamb chops in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Remove the lamb chops from the marinade and let excess marinade drip off. Grill the chops for about 4-5 minutes on each side for medium-rare, or until desired doneness.
