Ingredients
- Lamb chops - 4 pieces (about 300g)
- Szechuan peppercorns - 1 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili oil - 1 tablespoon
- Brown sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Green onion - 1, chopped (for garnish)
Steps
- In a dry skillet, lightly toast the Szechuan peppercorns over medium heat for 2-3 minutes until fragrant, then grind them into a fine powder.
- In a bowl, mix the ground Szechuan peppercorns, minced garlic, grated ginger, soy sauce, rice vinegar, chili oil, brown sugar, sesame oil, salt, and black pepper to create a marinade.
- Place the lamb chops in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat your grill or grill pan over medium-high heat.
- Remove the lamb chops from the marinade and let excess marinade drip off. Grill the chops for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- Once cooked, remove the chops from the grill and let them rest for 5 minutes.
- Serve the lamb chops garnished with chopped green onions.
