- Chicken wings - 500 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Ginger powder - 1 teaspoon
- Szechuan peppercorns - 1 tablespoon
- Chili oil - 2 tablespoons
- Soy sauce (low sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Green onions - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
- In a large bowl, combine chicken wings, salt, black pepper, garlic powder, and ginger powder. Toss well to coat evenly.
- Spread the wings out on a baking sheet lined with parchment paper, making sure they are not touching.
- Bake the wings in the preheated oven for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.
- While the wings are baking, prepare the sauce by heating chili oil in a small saucepan over medium heat.
- Add Szechuan peppercorns to the hot oil and sauté for about 1 minute until fragrant.
- Stir in soy sauce and rice vinegar, then bring to a simmer. Cook for another 2-3 minutes to combine flavors.
- Once the wings are done, transfer them to a large mixing bowl and pour the sauce over them. Toss to coat thoroughly.
- Garnish with chopped green onions and cilantro before serving.
