  • Szechuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Soy sauce (or coconut aminos for keto) - 3 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Scallions - 2, chopped
  • Cilantro - for garnish
  • Salt - to taste

Steps

  1. Cut the chicken thighs into bite-sized pieces and season with salt.
  2. In a large skillet, heat olive oil over medium-high heat. Add minced garlic and ginger, sautéing until fragrant, about 1 minute.
  3. Add the chicken pieces to the skillet and cook until browned and cooked through, about 8-10 minutes.
  4. While the chicken cooks, in a small bowl, mix together the soy sauce, rice vinegar, sesame oil, Szechuan peppercorns, and red chili flakes.
