- Red chili flakes - 1 teaspoon (adjust to taste)
- Soy sauce (or coconut aminos for keto) - 3 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Scallions - 2, chopped
- Cilantro - for garnish

Steps
- Cut the chicken thighs into bite-sized pieces and season with salt.
- In a large skillet, heat olive oil over medium-high heat. Add minced garlic and ginger, sautéing until fragrant, about 1 minute.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 8-10 minutes.
