Ingredients

  • Bell Peppers (red, yellow, green) - 2 cups, chopped
  • Zucchini - 1 medium, sliced
  • Eggplant - 1 small, cubed
  • Mushrooms (shiitake or button) - 1 cup, halved
  • Red Onion - 1 medium, cut into wedges
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Szechuan Peppercorns - 1 teaspoon, toasted and ground
  • Soy Sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Rice Vinegar - 1 tablespoon
  • Chili Oil - 1 teaspoon (adjust for spice preference)
  • Fresh Cilantro - for garnish
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. In a large bowl, combine the soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, ground Szechuan peppercorns, chili oil, salt, and black pepper to create the marinade.
  2. Add the chopped bell peppers, zucchini slices, cubed eggplant, halved mushrooms, and red onion wedges to the marinade. Toss well to coat all the vegetables evenly.
  3. Cover the bowl and let the vegetables marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated vegetables onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
  6. Grill the vegetable skewers for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
  7. Remove the skewers from the grill, garnish with fresh cilantro, and serve immediately.
