- Bell Peppers (red, yellow, green) - 2 cups, chopped
- Zucchini - 1 medium, sliced
- Eggplant - 1 small, cubed
- Mushrooms (shiitake or button) - 1 cup, halved
- Red Onion - 1 medium, cut into wedges
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Szechuan Peppercorns - 1 teaspoon, toasted and ground
- Soy Sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame Oil - 1 tablespoon
- Rice Vinegar - 1 tablespoon
- Chili Oil - 1 teaspoon (adjust for spice preference)
- Fresh Cilantro - for garnish
- Salt - to taste

Steps
- In a large bowl, combine the soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, ground Szechuan peppercorns, chili oil, salt, and black pepper to create the marinade.
- Add the chopped bell peppers, zucchini slices, cubed eggplant, halved mushrooms, and red onion wedges to the marinade. Toss well to coat all the vegetables evenly.
- Cover the bowl and let the vegetables marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated vegetables onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
- Grill the vegetable skewers for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
- Remove the skewers from the grill, garnish with fresh cilantro, and serve immediately.
