Ingredients

  • Green beans - 200 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Szechuan peppercorns - 1 teaspoon, toasted and crushed
  • Red chili flakes - 1/2 teaspoon (adjust to taste)
  • Cilantro - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Wash and trim the green beans, cutting them into 5 cm lengths.
  2. Bring a pot of water to a boil and blanch the green beans for 3-4 minutes until bright green and tender-crisp.
  3. Immediately transfer the green beans to an ice bath to stop the cooking process. Drain and set aside.
  4. In a mixing bowl, whisk together sesame oil, soy sauce, rice vinegar, minced garlic, crushed Szechuan peppercorns, and red chili flakes to create the dressing.
  5. Add the blanched green beans to the dressing and toss well to coat.
  6. Let the salad marinate for about 5 minutes to absorb the flavors.
