- Dried red chilies - 4-5 pieces
- Garlic - 3 cloves, minced

- Green onion - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Chili bean paste - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Bell pepper (red or green) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Sugar - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Water - 100 ml
Steps
- 1. Cut the fish fillet into bite-sized pieces and marinate with 1 tablespoon of soy sauce and cornstarch for 10 minutes.
- 2. In a wok or large skillet, heat the vegetable oil over medium heat. Add Szechuan peppercorns and dried red chilies, stirring until fragrant (about 1 minute).

- 4. Increase the heat to high and add the marinated fish pieces, cooking for about 3-4 minutes until they start to turn golden.
- 5. Add the sliced bell pepper, julienned carrot, and chopped green onion to the pan, stir-frying for about 2-3 minutes until the vegetables are slightly tender.
- 6. In a small bowl, mix the remaining soy sauce, chili bean paste, sugar, rice vinegar, and water. Pour this sauce over the fish and vegetables, stirring to coat everything evenly.
- 7. Allow the mixture to simmer for an additional 3-5 minutes until the sauce thickens slightly and the fish is cooked through.
- 8. Serve hot, garnished with additional green onions if desired.
