Ingredients

  • White fish fillet (such as tilapia or cod) - 300 grams
  • Szechuan peppercorns - 1 teaspoon
  • Dried red chilies - 4-5 pieces
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onion - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Chili bean paste - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Bell pepper (red or green) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Sugar - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Water - 100 ml

Steps

  1. 1. Cut the fish fillet into bite-sized pieces and marinate with 1 tablespoon of soy sauce and cornstarch for 10 minutes.
  2. 2. In a wok or large skillet, heat the vegetable oil over medium heat. Add Szechuan peppercorns and dried red chilies, stirring until fragrant (about 1 minute).
  3. 3. Add minced garlic and ginger to the wok, sautéing for another minute until aromatic.
  4. 4. Increase the heat to high and add the marinated fish pieces, cooking for about 3-4 minutes until they start to turn golden.
  5. 5. Add the sliced bell pepper, julienned carrot, and chopped green onion to the pan, stir-frying for about 2-3 minutes until the vegetables are slightly tender.
  6. 6. In a small bowl, mix the remaining soy sauce, chili bean paste, sugar, rice vinegar, and water. Pour this sauce over the fish and vegetables, stirring to coat everything evenly.
  7. 7. Allow the mixture to simmer for an additional 3-5 minutes until the sauce thickens slightly and the fish is cooked through.
  8. 8. Serve hot, garnished with additional green onions if desired.
