- All-purpose flour - 200 grams
- Warm water - 120 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Eggplant - 200 grams, diced
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Szechuan peppercorns - 1 teaspoon, toasted and crushed
- Soy sauce - 1 tablespoon
- Chili paste - 1 tablespoon
- Green onions - 2, chopped
- Cilantro - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water and knead to form a soft dough. Cover with a damp cloth and let it rest for 15 minutes.
- While the dough is resting, heat olive oil in a pan over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the diced eggplant to the pan and cook for about 5-7 minutes, stirring occasionally, until it starts to soften.
- Stir in the Szechuan peppercorns, soy sauce, and chili paste. Cook for another 5 minutes until the eggplant is tender and well coated in the sauce. Remove from heat and stir in chopped green onions and cilantro.
- Divide the rested dough into two equal portions and roll each one out into a thin circle, about 20 cm in diameter.
- Heat a non-stick skillet over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown and slightly puffed.
- Top each flatbread with the Szechuan eggplant mixture evenly. Serve warm, garnished with extra cilantro and green onions if desired.
