Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Eggplant - 200 grams, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Szechuan peppercorns - 1 teaspoon, toasted and crushed
  • Soy sauce - 1 tablespoon
  • Chili paste - 1 tablespoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water and knead to form a soft dough. Cover with a damp cloth and let it rest for 15 minutes.
  2. While the dough is resting, heat olive oil in a pan over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add the diced eggplant to the pan and cook for about 5-7 minutes, stirring occasionally, until it starts to soften.
  4. Stir in the Szechuan peppercorns, soy sauce, and chili paste. Cook for another 5 minutes until the eggplant is tender and well coated in the sauce. Remove from heat and stir in chopped green onions and cilantro.
  5. Divide the rested dough into two equal portions and roll each one out into a thin circle, about 20 cm in diameter.
  6. Heat a non-stick skillet over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown and slightly puffed.
  7. Top each flatbread with the Szechuan eggplant mixture evenly. Serve warm, garnished with extra cilantro and green onions if desired.
