Ingredients

  • Boneless chicken breast - 300 grams
  • Szechuan peppercorns - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili paste - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Spring onions - 2, chopped for garnish
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. Slice the chicken breast into thin strips and marinate with soy sauce, rice vinegar, cornstarch, and a pinch of salt for 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the Szechuan peppercorns and stir-fry for 30 seconds until fragrant.
  4. Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add garlic and ginger, and sauté for 1 minute.
  7. Add the sliced onions and bell peppers, and stir-fry for 3-4 minutes until they are tender-crisp.
  8. Return the chicken to the skillet and add chili paste and sesame oil. Stir to combine and cook for another 2 minutes.
  9. Garnish with chopped spring onions before serving.
