- Boneless chicken breast - 300 grams
- Szechuan peppercorns - 1 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Red bell pepper - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Onion - 1 medium, sliced
- Soy sauce (kosher) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili paste - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Spring onions - 2, chopped for garnish
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- Slice the chicken breast into thin strips and marinate with soy sauce, rice vinegar, cornstarch, and a pinch of salt for 15 minutes.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the Szechuan peppercorns and stir-fry for 30 seconds until fragrant.
- Add the marinated chicken to the skillet and stir-fry until cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and ginger, and sauté for 1 minute.
- Add the sliced onions and bell peppers, and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the chicken to the skillet and add chili paste and sesame oil. Stir to combine and cook for another 2 minutes.
- Garnish with chopped spring onions before serving.
