Steps
- Begin by placing the silken tofu in a bowl and gently mash it with a fork until smooth.
- In a small saucepan, combine sugar and water over medium heat, stirring until the sugar is fully dissolved.
- Once dissolved, add the vanilla extract and coconut milk to the saucepan, mixing well.
- In a separate small bowl, mix the cornstarch with a tablespoon of cold water to create a slurry.
- Slowly pour the cornstarch slurry into the saucepan while stirring continuously to avoid lumps.
- Bring the mixture to a gentle boil and cook for about 2-3 minutes until it thickens slightly.
- Remove the saucepan from heat and allow it to cool for a few minutes.
- Gently fold the sweet syrup into the mashed tofu until well combined and smooth.
- Divide the sweet tofu pudding into two serving bowls and chill in the refrigerator for at least 30 minutes before serving.
