Ingredients

  • Soybeans - 100 grams
  • Water - 1 liter
  • Rock sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - to taste

Steps

  1. Soak the soybeans in water overnight or for at least 8 hours to soften.
  2. Drain and rinse the soaked soybeans, then place them in a blender with 1 liter of fresh water.
  3. Blend the soybeans on high speed until smooth and creamy, about 2-3 minutes.
  4. Strain the blended mixture through a fine mesh sieve or cheesecloth into a pot, discarding the solid soybean pulp.
  5. Add the rock sugar and a pinch of salt to the strained soy milk, then heat over medium heat until it reaches a gentle simmer, stirring occasionally.
  6. Once the sugar has dissolved, remove the pot from heat and stir in the vanilla extract.
  7. Allow the sweet soy milk to cool slightly before serving warm or chill in the refrigerator for a refreshing cold drink.
