Steps

  1. Cut the eggplant into 1-inch thick slices and sprinkle them with salt. Let them sit for about 10 minutes to draw out excess moisture.
  2. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  3. In a bowl, mix together soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, and sesame oil to create the glaze.
