Ingredients
- Eggplant - 400 grams
- Soy sauce - 3 tablespoons
- Maple syrup - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 100 milliliters
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Cut the eggplant into 1-inch thick slices and sprinkle them with salt. Let them sit for about 10 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a bowl, mix together soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, and sesame oil to create the glaze.
- In a small bowl, dissolve cornstarch in water to make a slurry, then add it to the glaze mixture and stir well.
- Heat a non-stick skillet over medium heat and add a little oil. Place the eggplant slices in a single layer and cook for about 3-4 minutes on each side until golden brown and tender.
- Pour the glaze over the cooked eggplant and cook for an additional 2-3 minutes, flipping the slices gently to coat them evenly.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
