Ingredients

  • Adzuki beans - 100 grams
  • Water - 1 liter
  • Rock sugar - 50 grams
  • Salt - a pinch
  • Coconut milk - 100 ml (optional for creaminess)
  • Chopped nuts (such as walnuts or almonds) - 30 grams (for garnish)
  • Chopped fresh mint (for garnish) - a few leaves

Steps

  1. Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain and rinse the soaked beans, then place them in a pot with 1 liter of fresh water.
  3. Bring the pot to a boil over medium heat, then reduce to a simmer and cook for about 30-40 minutes, or until the beans are tender.
  4. Once the beans are tender, add the rock sugar and a pinch of salt, stirring until the sugar is completely dissolved.
  5. If you prefer a creamier soup, stir in the coconut milk and heat gently for another 5 minutes.
  6. Remove from heat and let it cool slightly before serving.
  7. Ladle the soup into bowls and garnish with chopped nuts and fresh mint leaves.
