Ingredients

  • adzuki beans - 100 grams
  • water - 500 ml
  • sugar - 50 grams
  • vanilla extract - 1 teaspoon
  • salt - a pinch

Steps

  1. Rinse the adzuki beans under cold water and soak them in a bowl of water for at least 4 hours or overnight.
  2. Drain the soaked beans and place them in a pot with 500 ml of fresh water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the beans are soft.
  4. Drain the beans and return them to the pot. Add the sugar, vanilla extract, and a pinch of salt.
  5. Cook over low heat, stirring frequently, for another 10-15 minutes until the mixture thickens and becomes paste-like.
  6. Remove from heat and let it cool slightly before transferring to a blender or food processor.
  7. Blend until smooth, adjusting the consistency with a little water if necessary.
  8. Let the paste cool completely before serving or using it in other recipes.
