Ingredients
- adzuki beans - 100 grams
- water - 500 ml
- sugar - 50 grams
- vanilla extract - 1 teaspoon
- salt - a pinch
Steps
- Rinse the adzuki beans under cold water and soak them in a bowl of water for at least 4 hours or overnight.
- Drain the soaked beans and place them in a pot with 500 ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the beans are soft.
- Drain the beans and return them to the pot. Add the sugar, vanilla extract, and a pinch of salt.
- Cook over low heat, stirring frequently, for another 10-15 minutes until the mixture thickens and becomes paste-like.
- Remove from heat and let it cool slightly before transferring to a blender or food processor.
- Blend until smooth, adjusting the consistency with a little water if necessary.
- Let the paste cool completely before serving or using it in other recipes.
