- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Coconut milk - 100 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
- Cilantro - a handful, chopped (for garnish)
Steps
- In a pot, heat sesame oil over medium heat. Add chopped onion, minced garlic, and ginger, and sauté until the onion becomes translucent.
- Add diced carrots and sweet potatoes to the pot, stirring for about 5 minutes to combine with the aromatics.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the sweet potatoes are tender.
- Once cooked, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the coconut milk and soy sauce, then season with salt and black pepper to taste. Heat through for another 2-3 minutes.
- Serve hot, garnished with chopped green onions and cilantro.
