Ingredients

  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Coconut milk - 100 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. In a pot, heat sesame oil over medium heat. Add chopped onion, minced garlic, and ginger, and sauté until the onion becomes translucent.
  2. Add diced carrots and sweet potatoes to the pot, stirring for about 5 minutes to combine with the aromatics.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the sweet potatoes are tender.
  4. Once cooked, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  5. Stir in the coconut milk and soy sauce, then season with salt and black pepper to taste. Heat through for another 2-3 minutes.
  6. Serve hot, garnished with chopped green onions and cilantro.
