- Sweet potato - 200 grams
- All-purpose flour - 150 grams
- Water - 60 ml
- Salt - 1/2 teaspoon
- Scallions - 4 stalks
- Vegetable oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Peel and dice the sweet potato into small cubes, then steam or boil until tender, about 15 minutes.
- While the sweet potato is cooking, prepare the dough by mixing the all-purpose flour and salt in a bowl. Gradually add water until a dough forms, then knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 10 minutes.
- Chop the scallions finely and set aside.
- Once the sweet potatoes are cooked, mash them in a bowl and mix in the chopped scallions, black pepper, and sesame oil. Adjust seasoning if necessary.
- Divide the dough into two equal portions. Roll each portion into a circle about 1/4 inch thick.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Place one rolled-out dough circle in the skillet, then spread half of the sweet potato mixture on one half of the dough, folding the other half over to create a semi-circle.
- Cook for about 4-5 minutes on each side until golden brown and crispy, adding more oil if needed. Repeat with the second dough circle and remaining filling.
- Transfer both pies to a baking sheet and place in the oven for 10 minutes to ensure they are heated through and crispy.
- Remove from the oven, slice, and serve warm.
