  • Sesame oil - 1 teaspoon

  • Chili flakes - 1/2 teaspoon (optional)
  • Coriander leaves - for garnish

Steps

  1. Peel the sweet potato and cut it into thin matchstick-sized pieces or use a spiralizer to create sweet potato noodles.
  2. Soak the rice noodles in warm water for about 10 minutes or until they are soft, then drain and set aside.
  3. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the sweet potato noodles to the skillet and stir-fry for 5-7 minutes until they begin to soften.
  5. Add the soaked rice noodles to the skillet along with the soy sauce, sesame oil, salt, and pepper. Stir-fry for an additional 3-5 minutes until everything is well combined and heated through.
