Steps
- Peel the sweet potato and cut it into thin matchstick-sized pieces or use a spiralizer to create sweet potato noodles.
- Soak the rice noodles in warm water for about 10 minutes or until they are soft, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
