Ingredients

  • Sweet potato - 200 grams
  • All-purpose flour - 150 grams
  • Active dry yeast - 5 grams
  • Warm water - 70 ml
  • Maple syrup - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 4 pieces
  • Cucumber - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons
  • Sesame seeds - 1 tablespoon

Steps

  1. Peel and chop the sweet potato into small cubes, then steam them for about 15 minutes or until tender.
  2. In a bowl, combine warm water, active dry yeast, and maple syrup. Let it sit for 5-10 minutes until frothy.
  3. In a separate mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  4. Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. Once the sweet potato is cooked, mash it in a bowl and set aside.
  7. Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a flat circle.
  8. Place a spoonful of mashed sweet potato in the center of each circle, fold the edges over to seal, and shape them into buns.
  9. Place the buns on a piece of parchment paper in a steamer basket. Let them rest for another 10 minutes.
  10. Steam the buns for 15 minutes until fluffy and cooked through.
  11. To assemble, spread vegan mayonnaise on the bottom of each bun, add lettuce and cucumber slices, then top with the steamed bun.
  12. Sprinkle sesame seeds on top before serving.
