- Sweet potato - 200 grams
- All-purpose flour - 150 grams
- Active dry yeast - 5 grams
- Warm water - 70 ml
- Maple syrup - 1 tablespoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Lettuce leaves - 4 pieces
- Cucumber - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- Peel and chop the sweet potato into small cubes, then steam them for about 15 minutes or until tender.
- In a bowl, combine warm water, active dry yeast, and maple syrup. Let it sit for 5-10 minutes until frothy.
- In a separate mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Once the sweet potato is cooked, mash it in a bowl and set aside.
- Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a flat circle.
- Place a spoonful of mashed sweet potato in the center of each circle, fold the edges over to seal, and shape them into buns.
- Place the buns on a piece of parchment paper in a steamer basket. Let them rest for another 10 minutes.
- Steam the buns for 15 minutes until fluffy and cooked through.
- To assemble, spread vegan mayonnaise on the bottom of each bun, add lettuce and cucumber slices, then top with the steamed bun.
- Sprinkle sesame seeds on top before serving.
