  • Sweet potato - 200 grams

  • Green onions - 2, finely chopped
  • Bell pepper - 1/2, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black sesame seeds - 1 teaspoon

Steps

  1. Peel and dice the sweet potato into small cubes. Boil in water for about 10-15 minutes until tender, then drain and mash until smooth.
  2. In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  4. Once the sweet potato is cooled slightly, mix it with the chopped green onions, soy sauce, and sesame oil. Set aside.
  5. Divide the dough into two equal portions. Roll out each portion into a flat round shape, about 1 cm thick.
  6. Heat a non-stick skillet over medium heat. Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
  7. Spread the sweet potato mixture evenly over one side of each flatbread. Top with sliced bell pepper and mushrooms.
  8. Sprinkle black sesame seeds over the toppings, then cover the skillet with a lid and cook for an additional 5 minutes on low heat to allow the vegetables to soften.
  9. Slice the flatbreads into wedges and serve hot.
