- Bell pepper - 1/2, thinly sliced
- Mushrooms - 100 grams, sliced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Black sesame seeds - 1 teaspoon
Steps
- Peel and dice the sweet potato into small cubes. Boil in water for about 10-15 minutes until tender, then drain and mash until smooth.
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Once the sweet potato is cooled slightly, mix it with the chopped green onions, soy sauce, and sesame oil. Set aside.
- Divide the dough into two equal portions. Roll out each portion into a flat round shape, about 1 cm thick.
- Heat a non-stick skillet over medium heat. Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
- Spread the sweet potato mixture evenly over one side of each flatbread. Top with sliced bell pepper and mushrooms.
- Sprinkle black sesame seeds over the toppings, then cover the skillet with a lid and cook for an additional 5 minutes on low heat to allow the vegetables to soften.
- Slice the flatbreads into wedges and serve hot.
