Ingredients

  • Sweet potato - 200 grams, peeled and diced
  • Jasmine rice - 100 grams, rinsed
  • Water - 800 ml
  • Chicken breast - 100 grams, diced
  • Green onion - 2 stalks, chopped
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Toasted sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a pot, combine the rinsed jasmine rice, diced sweet potato, and water. Bring to a boil over medium heat.
  2. Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the rice and sweet potatoes are soft and the mixture has a porridge-like consistency.
  3. While the congee is cooking, in a separate pan, heat a small amount of oil over medium heat. Add the diced chicken, ginger, salt, and pepper, cooking until the chicken is fully cooked and no longer pink.
  4. Once the congee is ready, stir in the cooked chicken, soy sauce, and sesame oil. Adjust seasoning as needed.
  5. Serve the sweet potato congee hot, garnished with chopped green onion and toasted sesame seeds.
