- Sweet potatoes - 300 grams, peeled and cubed
- Coconut flour - 2 tablespoons
- Green onions - 2, finely chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Coconut oil - 2 tablespoons, melted
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cubed sweet potatoes, coconut flour, green onions, garlic, ginger, melted coconut oil, beaten egg, salt, and black pepper.
- Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Using your hands, form the mixture into small bite-sized balls, about 2.5 cm in diameter, and place them on the prepared baking sheet.
- Sprinkle sesame seeds over the top of each sweet potato bite.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
- Remove from the oven and let cool slightly before serving.
