Ingredients

  • Sweet potatoes - 300 grams, peeled and cubed
  • Coconut flour - 2 tablespoons
  • Green onions - 2, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Coconut oil - 2 tablespoons, melted
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cubed sweet potatoes, coconut flour, green onions, garlic, ginger, melted coconut oil, beaten egg, salt, and black pepper.
  3. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  4. Using your hands, form the mixture into small bite-sized balls, about 2.5 cm in diameter, and place them on the prepared baking sheet.
  5. Sprinkle sesame seeds over the top of each sweet potato bite.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
  7. Remove from the oven and let cool slightly before serving.
