- Sweet potato - 200 grams
- All-purpose flour - 150 grams
- Warm water - 80 ml
- Yeast - 5 grams
- Sugar - 5 grams
- Salt - 1 gram
- Olive oil - 1 tablespoon
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Carrot - 50 grams, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Black pepper - to taste
Steps
- In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.
- In a mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms. Cover and let it rise for 30 minutes.
- Meanwhile, peel and steam the sweet potato until tender, about 15 minutes. Mash it in a bowl.
- In a pan, heat a little oil and sauté garlic, green onion, and grated carrot until softened. Add the mashed sweet potato, soy sauce, sesame oil, and black pepper. Mix well and cook for another 5 minutes. Let it cool.
- After the dough has risen, divide it into 4 equal pieces and roll them into balls. Roll each ball into a flat circle about 0.5 cm thick.
- Place a spoonful of the sweet potato filling in the center of each circle, then fold the edges over and pinch to seal.
- Place the bao buns on parchment paper and let them rise for another 10 minutes.
- Steam the bao in a steamer basket over boiling water for 10-12 minutes until fluffy and cooked through. Serve warm.
