Ingredients

  • Sweet potato - 200 grams
  • All-purpose flour - 150 grams
  • Warm water - 80 ml
  • Yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 1 gram
  • Olive oil - 1 tablespoon
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Carrot - 50 grams, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until frothy.
  2. In a mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms. Cover and let it rise for 30 minutes.
  3. Meanwhile, peel and steam the sweet potato until tender, about 15 minutes. Mash it in a bowl.
  4. In a pan, heat a little oil and sauté garlic, green onion, and grated carrot until softened. Add the mashed sweet potato, soy sauce, sesame oil, and black pepper. Mix well and cook for another 5 minutes. Let it cool.
  5. After the dough has risen, divide it into 4 equal pieces and roll them into balls. Roll each ball into a flat circle about 0.5 cm thick.
  6. Place a spoonful of the sweet potato filling in the center of each circle, then fold the edges over and pinch to seal.
  7. Place the bao buns on parchment paper and let them rise for another 10 minutes.
  8. Steam the bao in a steamer basket over boiling water for 10-12 minutes until fluffy and cooked through. Serve warm.
