- Sweet potato - 200 grams
- Leek - 1 medium (about 100 grams)
- All-purpose flour - 150 grams
- Butter - 50 grams (cold)
- Cold water - 50 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove (minced)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 50 grams (grated)
- Egg - 1 (beaten, for egg wash)
Steps
- Preheat the oven to 200°C (392°F).
- Peel and cube the sweet potato. Boil in salted water for about 15 minutes until tender, then drain and mash until smooth.
- While the sweet potato is cooking, thinly slice the leek and sauté it in olive oil with the minced garlic over medium heat until softened, about 5-7 minutes. Season with salt and black pepper.
- In a mixing bowl, combine the all-purpose flour and cold butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
- In a bowl, combine the mashed sweet potato, sautéed leek, and grated cheddar cheese. Mix well and adjust seasoning if needed.
- Roll out the chilled dough on a floured surface to fit a 20cm pie dish. Place the rolled dough into the dish, pressing it into the edges.
- Fill the pie crust with the sweet potato and leek mixture, smoothing the top.
- Brush the edges of the crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
- Allow to cool slightly before slicing and serving.
