Ingredients

  • Sweet potato - 200 grams
  • Leek - 1 medium (about 100 grams)
  • All-purpose flour - 150 grams
  • Butter - 50 grams (cold)
  • Cold water - 50 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove (minced)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 50 grams (grated)
  • Egg - 1 (beaten, for egg wash)

Steps

  1. Preheat the oven to 200°C (392°F).
  2. Peel and cube the sweet potato. Boil in salted water for about 15 minutes until tender, then drain and mash until smooth.
  3. While the sweet potato is cooking, thinly slice the leek and sauté it in olive oil with the minced garlic over medium heat until softened, about 5-7 minutes. Season with salt and black pepper.
  4. In a mixing bowl, combine the all-purpose flour and cold butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
  5. Add cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
  6. In a bowl, combine the mashed sweet potato, sautéed leek, and grated cheddar cheese. Mix well and adjust seasoning if needed.
  7. Roll out the chilled dough on a floured surface to fit a 20cm pie dish. Place the rolled dough into the dish, pressing it into the edges.
  8. Fill the pie crust with the sweet potato and leek mixture, smoothing the top.
  9. Brush the edges of the crust with the beaten egg for a golden finish.
  10. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  11. Allow to cool slightly before slicing and serving.
