- Lemon juice - 1 teaspoon
Steps
- In a small saucepan, combine 400 ml of water and the dried osmanthus flowers. Bring to a gentle simmer over medium heat and let steep for 10 minutes.
- After steeping, strain the liquid through a fine mesh sieve to remove the osmanthus flowers, returning the infused water to the saucepan.
- Add the agar-agar powder and erythritol to the infused water. Stir well to dissolve and bring the mixture to a boil over medium heat, stirring constantly.
- Once boiling, reduce the heat and let it simmer for an additional 2-3 minutes until the agar-agar is fully dissolved.
- Remove from heat and stir in the lemon juice for added flavor.
- Pour the mixture into small molds or serving dishes and let it cool to room temperature before refrigerating for at least 2 hours until set.
- Once set, gently unmold the jelly and serve chilled.
