Ingredients

  • Dried osmanthus flowers - 2 tablespoons
  • Water - 400 ml
  • Agar-agar powder - 2 grams
  • Erythritol - 2 tablespoons
  • Lemon juice - 1 teaspoon

Steps

  1. In a small saucepan, combine 400 ml of water and the dried osmanthus flowers. Bring to a gentle simmer over medium heat and let steep for 10 minutes.
  2. After steeping, strain the liquid through a fine mesh sieve to remove the osmanthus flowers, returning the infused water to the saucepan.
  3. Add the agar-agar powder and erythritol to the infused water. Stir well to dissolve and bring the mixture to a boil over medium heat, stirring constantly.
  4. Once boiling, reduce the heat and let it simmer for an additional 2-3 minutes until the agar-agar is fully dissolved.
  5. Remove from heat and stir in the lemon juice for added flavor.
  6. Pour the mixture into small molds or serving dishes and let it cool to room temperature before refrigerating for at least 2 hours until set.
  7. Once set, gently unmold the jelly and serve chilled.
