Ingredients
- Mung beans - 100 grams
- Coconut milk - 200 ml
- Honey or maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Water - 500 ml
Steps
- Rinse the mung beans under cold water and soak them in 500 ml of water for at least 4 hours or overnight.
- Drain the mung beans and place them in a pot with 300 ml of fresh water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the beans are soft.
- Once cooked, drain any excess water and transfer the mung beans to a blender.
- Add coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt to the blender. Blend until smooth and creamy.
- Pour the mixture back into the pot and cook over low heat for 5-7 minutes, stirring constantly until slightly thickened.
- Remove from heat and let it cool slightly. Once cooled, transfer to serving bowls and refrigerate for at least 30 minutes before serving.
