Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 5 grams
  • Granulated sugar - 30 grams
  • Warm water (about 40°C) - 120 ml
  • Coconut milk - 100 ml
  • Coconut oil - 30 grams
  • Salt - 1/2 teaspoon
  • Grated coconut (unsweetened) - 50 grams
  • Powdered sugar - 20 grams

Steps

  1. In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, and salt. Mix well.
  3. Add the yeast mixture, coconut milk, and melted coconut oil to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. While the dough is rising, prepare the coconut filling by mixing grated coconut and powdered sugar in a bowl. Set aside.
  7. Once the dough has risen, punch it down and divide it into 4 equal portions.
  8. Flatten each portion into a small disc, place a tablespoon of the coconut filling in the center, and fold the dough over to seal it.
  9. Shape each filled disc into a bun and place them on a baking tray lined with parchment paper.
  10. Cover the buns with a clean cloth and let them rise for another 30 minutes.
  11. Preheat the oven to 180°C (350°F).
  12. Bake the buns for 15-20 minutes or until golden brown.
  13. Remove from the oven and allow to cool slightly before serving.
