- All-purpose flour - 250 grams
- Active dry yeast - 5 grams
- Granulated sugar - 30 grams
- Warm water (about 40°C) - 120 ml
- Coconut milk - 100 ml
- Coconut oil - 30 grams
- Salt - 1/2 teaspoon
- Grated coconut (unsweetened) - 50 grams
- Powdered sugar - 20 grams
Steps
- In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, sugar, and salt. Mix well.
- Add the yeast mixture, coconut milk, and melted coconut oil to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the coconut filling by mixing grated coconut and powdered sugar in a bowl. Set aside.
- Once the dough has risen, punch it down and divide it into 4 equal portions.
- Flatten each portion into a small disc, place a tablespoon of the coconut filling in the center, and fold the dough over to seal it.
- Shape each filled disc into a bun and place them on a baking tray lined with parchment paper.
- Cover the buns with a clean cloth and let them rise for another 30 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the buns for 15-20 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
