Ingredients

  • Carrots - 300 grams, peeled and sliced into thin rounds
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon, for garnish
  • Green onions - 1 stalk, chopped, for garnish

Steps

  1. In a medium saucepan, bring water to a boil and add the sliced carrots. Blanch for 3-5 minutes until slightly tender, then drain and set aside.
  2. In the same saucepan, heat sesame oil over medium heat, then add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add the blanched carrots to the pan and stir well to combine with the garlic and ginger.
  4. In a small bowl, mix together the soy sauce, maple syrup, rice vinegar, and chili flakes. Pour this sauce over the carrots in the pan.
  5. Stir to coat the carrots evenly with the sauce and cook for an additional 5-7 minutes, allowing the sauce to thicken slightly and the carrots to absorb the flavors.
  6. Remove from heat and transfer to a serving dish. Garnish with sesame seeds and chopped green onions before serving.
