Ingredients

  • Firm tofu - 300 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Tomato ketchup - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut it into cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat. Add the tofu and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, and green onions, sautéing for about 1 minute until fragrant.
  5. Add the bell pepper, carrot, and broccoli to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  6. In a small bowl, mix the soy sauce, rice vinegar, brown sugar, and tomato ketchup until smooth.
  7. Return the cooked tofu to the pan with the vegetables, pour the sauce over the top, and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
  8. Drizzle with sesame oil, season with salt and black pepper to taste, and serve hot.
