- Firm tofu - 300 grams
- Cornstarch - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli florets - 100 grams
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Brown sugar - 1 tablespoon
- Tomato ketchup - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess water, then cut it into cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat. Add the tofu and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, and green onions, sautéing for about 1 minute until fragrant.
- Add the bell pepper, carrot, and broccoli to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- In a small bowl, mix the soy sauce, rice vinegar, brown sugar, and tomato ketchup until smooth.
- Return the cooked tofu to the pan with the vegetables, pour the sauce over the top, and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
- Drizzle with sesame oil, season with salt and black pepper to taste, and serve hot.
