- Firm tofu - 300 grams
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Red onion - 1, diced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Cornstarch - 2 tablespoons
- Olive oil - 1 tablespoon
- Soy sauce (gluten-free) - 3 tablespoons
- Rice vinegar - 2 tablespoons
- Brown sugar - 2 tablespoons
- Pineapple juice - 2 tablespoons
- Cooked jasmine rice - 200 grams
- Sesame seeds - 1 tablespoon (for garnish)
- Green onions - 2, sliced (for garnish)
Steps
- Press the tofu for 20 minutes to remove excess moisture. Cut the tofu into 2 cm cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat olive oil in a large skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the garlic, ginger, diced bell peppers, and red onion. Sauté for 5 minutes until the vegetables are tender.
- In a small bowl, mix together the gluten-free soy sauce, rice vinegar, brown sugar, and pineapple juice. Pour this sauce over the sautéed vegetables and bring to a simmer.
- Return the cooked tofu to the skillet and toss to coat in the sweet and sour sauce. Cook for an additional 3-4 minutes.
- While the tofu and vegetables are cooking, prepare the cooked jasmine rice according to package instructions.
- Serve the sweet and sour tofu skewers over a bed of jasmine rice, garnished with sesame seeds and sliced green onions.
