Ingredients

  • Firm tofu - 300 grams
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Red onion - 1, diced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Cornstarch - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Soy sauce (gluten-free) - 3 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 2 tablespoons
  • Pineapple juice - 2 tablespoons
  • Cooked jasmine rice - 200 grams
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)

Steps

  1. Press the tofu for 20 minutes to remove excess moisture. Cut the tofu into 2 cm cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat olive oil in a large skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the garlic, ginger, diced bell peppers, and red onion. Sauté for 5 minutes until the vegetables are tender.
  5. In a small bowl, mix together the gluten-free soy sauce, rice vinegar, brown sugar, and pineapple juice. Pour this sauce over the sautéed vegetables and bring to a simmer.
  6. Return the cooked tofu to the skillet and toss to coat in the sweet and sour sauce. Cook for an additional 3-4 minutes.
  7. While the tofu and vegetables are cooking, prepare the cooked jasmine rice according to package instructions.
  8. Serve the sweet and sour tofu skewers over a bed of jasmine rice, garnished with sesame seeds and sliced green onions.
