Ingredients

  • Firm tofu - 300 grams
  • Bell pepper (red or yellow) - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Honey or maple syrup - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Skewers (soaked in water if wooden) - 4-6 pieces

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
  2. In a bowl, mix soy sauce, honey (or maple syrup), rice vinegar, garlic, and ginger to create the marinade.
  3. Add the tofu cubes to the marinade and let them soak for at least 10 minutes.
  4. While the tofu is marinating, chop the bell pepper, zucchini, and red onion into 2 cm pieces.
  5. Preheat a grill or grill pan over medium heat and brush it lightly with olive oil.
  6. Remove the tofu from the marinade and toss it in cornstarch until evenly coated.
  7. On each skewer, thread the tofu cubes and the chopped vegetables alternately.
  8. Brush the skewers lightly with olive oil and sprinkle with sesame seeds.
  9. Grill the skewers for about 3-4 minutes on each side, or until the tofu is golden and the vegetables are tender.
  10. Serve hot with any leftover marinade drizzled over the skewers.
