- Firm tofu - 300 grams
- Bell pepper (red or yellow) - 1 medium
- Zucchini - 1 medium
- Red onion - 1 medium
- Olive oil - 2 tablespoons
- Soy sauce (gluten-free) - 2 tablespoons
- Honey or maple syrup - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Skewers (soaked in water if wooden) - 4-6 pieces
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
- In a bowl, mix soy sauce, honey (or maple syrup), rice vinegar, garlic, and ginger to create the marinade.
- Add the tofu cubes to the marinade and let them soak for at least 10 minutes.
- While the tofu is marinating, chop the bell pepper, zucchini, and red onion into 2 cm pieces.
- Preheat a grill or grill pan over medium heat and brush it lightly with olive oil.
- Remove the tofu from the marinade and toss it in cornstarch until evenly coated.
- On each skewer, thread the tofu cubes and the chopped vegetables alternately.
- Brush the skewers lightly with olive oil and sprinkle with sesame seeds.
- Grill the skewers for about 3-4 minutes on each side, or until the tofu is golden and the vegetables are tender.
- Serve hot with any leftover marinade drizzled over the skewers.
