- Firm tofu - 200 grams
- Bell pepper (red) - 1 medium, diced
- Carrot - 1 medium, sliced
- Broccoli florets - 100 grams
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (low sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Brown sugar - 2 tablespoons
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 100 ml
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1.5 cm cubes.
- In a bowl, mix soy sauce, rice vinegar, brown sugar, cornstarch, and water to create the sweet and sour sauce.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until golden brown, about 5-7 minutes, turning occasionally. Remove the tofu and set aside.
- In the same skillet, add the remaining tablespoon of oil. Sauté the garlic, ginger, bell pepper, carrot, and broccoli for about 5 minutes or until the vegetables are tender but still crisp.
- Return the tofu to the skillet, pour the sweet and sour sauce over the mixture, and stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens.
- Garnish with chopped green onions and sesame seeds before serving.
