Ingredients

  • Firm tofu - 250 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 100 grams, fresh or canned
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 2 tablespoons
  • Tomato ketchup - 3 tablespoons
  • Salt - to taste
  • Green onions - 2 stalks, chopped (for garnish)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of oil. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  5. Add the diced red and green bell peppers to the skillet and stir-fry for about 3-4 minutes until slightly tender.
  6. Stir in the pineapple chunks, soy sauce, rice vinegar, maple syrup, and tomato ketchup. Mix well and cook for another 2-3 minutes until the sauce thickens slightly.
  7. Return the crispy tofu to the skillet, tossing everything together to coat the tofu in the sauce. Cook for an additional 2 minutes.
  8. Season with salt to taste and garnish with chopped green onions before serving.
