- Firm tofu - 250 grams
- Cornstarch - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 100 grams, fresh or canned
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Maple syrup - 2 tablespoons
- Tomato ketchup - 3 tablespoons
- Salt - to taste
- Green onions - 2 stalks, chopped (for garnish)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining 1 tablespoon of oil. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the diced red and green bell peppers to the skillet and stir-fry for about 3-4 minutes until slightly tender.
- Stir in the pineapple chunks, soy sauce, rice vinegar, maple syrup, and tomato ketchup. Mix well and cook for another 2-3 minutes until the sauce thickens slightly.
- Return the crispy tofu to the skillet, tossing everything together to coat the tofu in the sauce. Cook for an additional 2 minutes.
- Season with salt to taste and garnish with chopped green onions before serving.
