Steps
- In a bowl, combine soy sauce, rice vinegar, honey, ketchup, and cornstarch to create the sweet and sour sauce. Mix well and set aside.
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced red bell pepper to the pan and cook for 3-4 minutes until slightly tender.

- Pour the sweet and sour sauce over the shrimp and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- While the shrimp is cooking, heat the corn tortillas in a separate pan or microwave until warm.
- To assemble the tacos, place a portion of the shrimp and vegetable mixture on each tortilla. Top with chopped green onions and fresh cilantro.
