  • Ginger (minced) - 1 teaspoon
  • Red bell pepper (sliced) - 1 medium
  • Carrot (sliced) - 1 medium
  • Sugar snap peas - 100 grams
  • Chicken or vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Green onions (chopped) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium bowl, combine the shrimp with soy sauce, rice vinegar, and brown sugar. Let it marinate for 10 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced red bell pepper, carrot, and sugar snap peas to the pot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and let it simmer for 5 minutes.
  5. In a small bowl, mix cornstarch with water to create a slurry. Slowly add this to the soup while stirring to thicken it slightly.
