Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Bell pepper (sliced) - 1 medium
  • Carrot (sliced) - 1 medium
  • Onion (sliced) - 1 medium
  • Pineapple chunks - 100 grams
  • Garlic (minced) - 2 cloves
  • Ginger (minced) - 1 teaspoon
  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish
  • Green onions (sliced) - for garnish

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, and carrot, and stir-fry for about 4-5 minutes until they begin to soften.
  5. Add the pineapple chunks and stir well to combine with the vegetables.
  6. In a small bowl, mix the soy sauce, rice vinegar, brown sugar, and cornstarch together until smooth.
  7. Pour the sauce over the vegetables in the skillet, and stir well to coat. Cook for an additional 2 minutes until the sauce thickens.
  8. Return the cooked shrimp to the skillet, and toss everything together. Season with salt and black pepper to taste.
  9. Serve hot, garnished with sesame seeds and sliced green onions.
