- Shrimp (peeled and deveined) - 300 grams
- Bell pepper (sliced) - 1 medium
- Carrot (sliced) - 1 medium
- Onion (sliced) - 1 medium
- Pineapple chunks - 100 grams
- Garlic (minced) - 2 cloves
- Ginger (minced) - 1 teaspoon
- Soy sauce (low sodium) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
- Green onions (sliced) - for garnish
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, and carrot, and stir-fry for about 4-5 minutes until they begin to soften.
- Add the pineapple chunks and stir well to combine with the vegetables.
- In a small bowl, mix the soy sauce, rice vinegar, brown sugar, and cornstarch together until smooth.
- Pour the sauce over the vegetables in the skillet, and stir well to coat. Cook for an additional 2 minutes until the sauce thickens.
- Return the cooked shrimp to the skillet, and toss everything together. Season with salt and black pepper to taste.
- Serve hot, garnished with sesame seeds and sliced green onions.
