  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 200 ml
  • Green onions - 2, sliced for garnish
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to the package instructions.
  2. In a bowl, mix the soy sauce, rice vinegar, maple syrup, and cornstarch to create the sweet and sour sauce.
  3. Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the diced bell pepper, julienned carrot, and green peas to the skillet, cooking for 5-7 minutes until the vegetables are tender.
  5. Stir in the pineapple chunks and the sweet and sour sauce mixture, cooking for another 2-3 minutes until the sauce thickens slightly.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet, mixing well to combine everything.
