- Prawns (peeled and deveined) - 300 grams
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 100 grams
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Gluten-free soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Honey - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, mix gluten-free soy sauce, rice vinegar, honey, cornstarch, and water to create the sweet and sour sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the prawns and cook for 3-4 minutes until they turn pink and opaque. Remove them from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Sauté the garlic, ginger, and onion until fragrant, about 2 minutes.
- Add the diced red and green bell peppers and cook for another 3 minutes until they start to soften.
- Stir in the pineapple chunks and return the cooked prawns to the skillet.
- Pour the sweet and sour sauce over the prawns and vegetables. Stir well to coat everything evenly and cook for an additional 3-4 minutes until the sauce thickens slightly.
- Season with salt and black pepper to taste. Serve hot over steamed rice or quinoa.
