Ingredients

  • Prawns (peeled and deveined) - 300 grams
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 100 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gluten-free soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Honey - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, mix gluten-free soy sauce, rice vinegar, honey, cornstarch, and water to create the sweet and sour sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the prawns and cook for 3-4 minutes until they turn pink and opaque. Remove them from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Sauté the garlic, ginger, and onion until fragrant, about 2 minutes.
  4. Add the diced red and green bell peppers and cook for another 3 minutes until they start to soften.
  5. Stir in the pineapple chunks and return the cooked prawns to the skillet.
  6. Pour the sweet and sour sauce over the prawns and vegetables. Stir well to coat everything evenly and cook for an additional 3-4 minutes until the sauce thickens slightly.
  7. Season with salt and black pepper to taste. Serve hot over steamed rice or quinoa.
