- Cornstarch - 2 tbsp
- Vegetable oil - 3 tbsp
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Pineapple chunks - 1/2 cup (canned in juice, drained)
- Soy sauce - 2 tbsp (use a kosher brand)
- Rice vinegar - 2 tbsp
- Brown sugar - 1 tbsp
- Ketchup - 2 tbsp
- Water - 1/4 cup
- Sesame seeds - 1 tbsp (for garnish)
- Green onions - 1-2, sliced (for garnish)
Steps
- Season the pork chops with salt and black pepper on both sides, then coat them lightly with cornstarch.
- In a large frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side, until they are golden brown and cooked through. Remove the pork chops from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Sauté the diced onion and garlic for about 2 minutes until fragrant.
- Add the diced red and green bell peppers to the pan and cook for another 3-4 minutes, until they start to soften.
- In a small bowl, mix together the soy sauce, rice vinegar, brown sugar, ketchup, and water. Pour this sauce over the sautéed vegetables in the pan.
- Add the pineapple chunks and stir everything together. Bring the mixture to a simmer and let it cook for about 2-3 minutes to thicken slightly.
- Return the cooked pork chops to the pan, coating them in the sweet and sour sauce. Cook for an additional 2 minutes to heat through.
- Serve the pork chops on a plate, drizzled with the sauce and garnished with sesame seeds and sliced green onions.
