Ingredients

  • Pork chops - 2 (about 200g each)
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Cornstarch - 2 tbsp
  • Vegetable oil - 3 tbsp
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Pineapple chunks - 1/2 cup (canned in juice, drained)
  • Soy sauce - 2 tbsp (use a kosher brand)
  • Rice vinegar - 2 tbsp
  • Brown sugar - 1 tbsp
  • Ketchup - 2 tbsp
  • Water - 1/4 cup
  • Sesame seeds - 1 tbsp (for garnish)
  • Green onions - 1-2, sliced (for garnish)

Steps

  1. Season the pork chops with salt and black pepper on both sides, then coat them lightly with cornstarch.
  2. In a large frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side, until they are golden brown and cooked through. Remove the pork chops from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Sauté the diced onion and garlic for about 2 minutes until fragrant.
  4. Add the diced red and green bell peppers to the pan and cook for another 3-4 minutes, until they start to soften.
  5. In a small bowl, mix together the soy sauce, rice vinegar, brown sugar, ketchup, and water. Pour this sauce over the sautéed vegetables in the pan.
  6. Add the pineapple chunks and stir everything together. Bring the mixture to a simmer and let it cook for about 2-3 minutes to thicken slightly.
  7. Return the cooked pork chops to the pan, coating them in the sweet and sour sauce. Cook for an additional 2 minutes to heat through.
  8. Serve the pork chops on a plate, drizzled with the sauce and garnished with sesame seeds and sliced green onions.
