Ingredients

  • Ground pork - 300 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2, finely chopped
  • Egg - 1 large
  • Coconut flour - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Low-carb sweetener (like erythritol) - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon for cooking
  • Lettuce leaves (for wrapping) - 4 large leaves
  • Sliced cucumber - 100 grams
  • Sliced bell pepper - 100 grams
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a mixing bowl, combine ground pork, minced garlic, grated ginger, chopped green onion, egg, coconut flour, soy sauce, rice vinegar, low-carb sweetener, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into two equal portions and shape them into patties.
  3. Heat olive oil in a skillet over medium heat. Add the pork patties and cook for about 5-6 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the sweet and sour sauce by mixing rice vinegar, soy sauce, and low-carb sweetener in a small bowl. Adjust sweetness to taste.
  5. Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
  6. To assemble, place a pork patty on a large lettuce leaf, top with sliced cucumber and bell pepper, drizzle with the sweet and sour sauce, and sprinkle with sesame seeds.
  7. Wrap the lettuce around the filling and serve immediately.
