- Low-carb sweetener (like erythritol) - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon for cooking
- Lettuce leaves (for wrapping) - 4 large leaves
- Sliced cucumber - 100 grams
- Sliced bell pepper - 100 grams
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a mixing bowl, combine ground pork, minced garlic, grated ginger, chopped green onion, egg, coconut flour, soy sauce, rice vinegar, low-carb sweetener, salt, and black pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape them into patties.
- Heat olive oil in a skillet over medium heat. Add the pork patties and cook for about 5-6 minutes on each side, or until fully cooked and golden brown.
- While the patties are cooking, prepare the sweet and sour sauce by mixing rice vinegar, soy sauce, and low-carb sweetener in a small bowl. Adjust sweetness to taste.
- Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
- To assemble, place a pork patty on a large lettuce leaf, top with sliced cucumber and bell pepper, drizzle with the sweet and sour sauce, and sprinkle with sesame seeds.
