Ingredients

  • Whole wheat pizza dough - 200 grams
  • Tomato sauce - 100 grams
  • Cooked chicken breast, diced - 100 grams
  • Pineapple chunks - 50 grams
  • Red bell pepper, sliced - 50 grams
  • Green bell pepper, sliced - 50 grams
  • Red onion, sliced - 50 grams
  • Low-sodium soy sauce - 1 tablespoon (15 ml)
  • Honey - 1 tablespoon (15 ml)
  • Rice vinegar - 1 tablespoon (15 ml)
  • Olive oil - 1 tablespoon (15 ml)
  • Mozzarella cheese, shredded - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. Spread the tomato sauce evenly over the pizza base.
  5. In a bowl, mix the diced chicken, pineapple chunks, sliced red and green bell peppers, and sliced red onion.
  6. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and olive oil to create the sweet and sour sauce.
  7. Pour the sweet and sour sauce over the chicken and vegetable mixture, and toss to coat evenly.
  8. Spread the chicken and vegetable mixture evenly over the pizza.
  9. Sprinkle the shredded mozzarella cheese on top.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  11. Remove from the oven and garnish with fresh cilantro before slicing and serving.
