Ingredients
- Lotus root - 200 grams, sliced
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Red bell pepper - 50 grams, sliced
- Green bell pepper - 50 grams, sliced
- Carrot - 50 grams, julienned
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 50 milliliters
- Sesame seeds - 1 teaspoon, toasted
- Green onions - 1 for garnish, chopped
Steps
- Rinse and peel the lotus root, then slice it into thin rounds. Soak the slices in water for about 10 minutes to prevent browning.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 30 seconds.
- Add the sliced lotus root, red bell pepper, green bell pepper, and carrot to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, mix soy sauce, rice vinegar, brown sugar, cornstarch, and water until well combined. Pour this sauce over the sautéed vegetables in the skillet.
- Stir well and cook for an additional 5 minutes, allowing the sauce to thicken and coat the vegetables evenly.
- Once done, sprinkle toasted sesame seeds over the dish and garnish with chopped green onions before serving.
